Enzo and Ruri met over a love of soft, jiggly pancakes.
Ruri Sayama and Enzo Miacci started making Japanese souffle pancakes at community pop-ups in 2022, Ruri bringing the recipe and Enzo bringing chef training with French and Italian roots. Enzo had worked at Eat Street before the pandemic, and a phone call in 2023 turned that into an opening. Fluffy Japancakes has kept its playful night version ever since, alongside a calmer cafe sibling, Souffle Japancakes.
No baking powder goes anywhere near the batter. The height comes from fresh meringue whipped for every order, using free-range eggs and sauces made mostly in house. Enough people who’ve eaten the real thing in Japan have said they prefer this version, including members of the team, which is the kind of compliment that’s hard to argue with.
