Chaar comes from Pete and Kristina Dressler, the couple behind Poulet & Porc, who opened this Greek charcoal rotisserie in 2023 after a decade Eat Street. The idea traces back to the souvla shops of Athens and Thessaloniki, where meat turns over open coals and gets carved fresh to order. Their lamb shoulder alone takes more than five hours, so the fire gets lit at eleven for a dinner service that starts at four.
Order the yiros or go all in on the platter, with lemon potatoes, extra pita and saganaki cheese carved straight off the spit.
